Step-by-Step Instructions
  1. Preheat your oven to 300°F (150°C).
  2. Pat the chuck roast dry and season both sides with salt and pepper.
  3. Heat olive oil in a Dutch oven and sear the roast for 5-7 minutes on each side.
  4. Remove the roast and caramelize the onions for 25-30 minutes in the same pot.
  5. Add minced garlic and maple syrup, cook for 7-8 minutes.
  6. Sprinkle flour over the mixture, then pour in red wine and deglaze the pot.
  7. Introduce beef stock, ensuring it covers two-thirds of the roast, and add herbs.
  8. Nestle the chuck roast back and cover the pot; bake for 3-4 hours.
  9. Remove the pot and let the roast rest for 10-15 minutes before serving.
