Step-by-Step Instructions
  1. Slice chicken breasts horizontally into cutlets, about ½ inch thick. Season with salt and pepper. Whisk buttermilk and hot sauce, soak chicken for 30 minutes.
  2. In a dish, combine flour, cornstarch, cayenne, garlic powder, and salt. Dredge soaked chicken in flour mixture, coat thoroughly.
  3. Heat oil in skillet to 350°F. Fry chicken cutlets for 3-4 minutes on each side until golden brown and internal temperature reaches 165°F. Drain excess oil.
  4. In a bowl, mix hot oil, brown sugar, cayenne, chili powder, and smoked paprika. Baste fried chicken with the hot sauce while hot.
  5. Toast burger buns. Spread mayonnaise on the bottom bun, add spicy chicken, coleslaw, and pickles. Combine with top bun and serve immediately.
