- Slice chicken breasts horizontally into cutlets, about ½ inch thick. Season with salt and pepper. Whisk buttermilk and hot sauce, soak chicken for 30 minutes.
- In a dish, combine flour, cornstarch, cayenne, garlic powder, and salt. Dredge soaked chicken in flour mixture, coat thoroughly.
- Heat oil in skillet to 350°F. Fry chicken cutlets for 3-4 minutes on each side until golden brown and internal temperature reaches 165°F. Drain excess oil.
- In a bowl, mix hot oil, brown sugar, cayenne, chili powder, and smoked paprika. Baste fried chicken with the hot sauce while hot.
- Toast burger buns. Spread mayonnaise on the bottom bun, add spicy chicken, coleslaw, and pickles. Combine with top bun and serve immediately.
