  • 1 cups Coffee/Liquor Use coffee for non-alcoholic version.
For Dusting
  • 0.25 cups Cocoa Powder

Step-by-Step Instructions
  1. Preheat your oven to 350°F (177°C) and prepare two 9-inch round cake pans with grease and parchment paper.
  2. Sift together cake flour, baking powder, and salt in a large mixing bowl.
  3. Dissolve instant espresso powder in boiling water and let cool.
  4. Cream softened unsalted butter, then gradually add sugar until light and fluffy.
  5. Mix in vanilla extract and eggs, one at a time.
  6. Combine dry ingredients with wet ingredients, alternating with whole milk; fold in espresso mixture.
  7. Divide batter into prepared pans and bake for 20-25 minutes, or until a toothpick comes out clean.
  8. Cool in pans for 5 minutes, then transfer to wire racks to cool completely.
  9. Whip mascarpone cheese and powdered sugar, then add heavy whipping cream until creamy.
