Preparation
- Preheat the oven to 175ºC (350ºF). Line the bottom of a greased 9-inch springform pan with parchment paper.
- In a medium bowl, combine the flour, dark brown sugar, and ground cinnamon for the crumb topping. Cut in the cold unsalted butter until coarse crumbs form.
- In a skillet, melt unsalted butter over medium heat and cook until golden brown and nutty, about 5 to 7 minutes. Let cool slightly.
- Whisk the cooled browned butter with granulated sugar until fluffy. Add eggs one at a time, mixing well after each.
- Sift together the flour, baking powder, baking soda, and salt in another bowl.
- Gradually add the dry ingredients to the butter mixture, alternating with the mashed bananas, milk, and vanilla. Fold in mini chocolate chips.
- Pour half the batter into the prepared pan, sprinkle half the crumb topping, layer remaining batter, and finish with the rest of the crumble.
- Bake for 45-50 minutes, or until a cake tester comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack. Mix glaze ingredients and drizzle over the cooled cake.
