- Prepare the marinade by whisking together honey, lime juice, lime zest, minced garlic, ground cumin, salt, and pepper until smooth. Set aside.
- Marinate the chicken in a resealable bag with the honey marinade for 30 minutes to 2 hours.
- Rinse jasmine rice under cold water until clear. Boil chicken broth and add rice, cover and simmer for 15 minutes.
- Grill the marinated chicken over medium-high heat for 6-7 minutes on each side. Let it rest before slicing.
- Combine diced avocado, red onion, fresh cilantro, and olive oil in a bowl. Mix gently.
- Assemble by layering rice, sliced chicken, and avocado mixture on serving plates.
- Serve garnished with lime wedges.
