Ingredients
  

For the Chicken Marinade
  • 2 pieces Boneless, skinless chicken breasts
  • 1/4 cup Honey Natural sweetener for marinade
  • 2 pieces Juice of limes
  • 1 teaspoon Zest of lime
  • 2 cloves Minced garlic
  • 1 teaspoon Ground cumin
  • to taste Salt and pepper
For the Rice
  • 1 cup Jasmine rice Fluffy base for the stack
  • 1 1/2 cups Chicken broth For cooking rice
For the Avocado Mix
  • 1 cup Diced avocado Creamy texture
  • 1/4 cup Red onion, finely chopped Adds crispness
  • 1/4 cup Fresh cilantro, chopped For freshness
  • 1 tablespoon Olive oil Binds the mixture
For Serving
  • 2 pieces Lime wedges For garnish

Method
 

Preparation
  1. Prepare the marinade by whisking together honey, lime juice, lime zest, minced garlic, ground cumin, salt, and pepper until smooth. Set aside.
  2. Marinate the chicken in a resealable bag with the honey marinade for 30 minutes to 2 hours.
  3. Rinse jasmine rice under cold water until clear. Boil chicken broth and add rice, cover and simmer for 15 minutes.
  4. Grill the marinated chicken over medium-high heat for 6-7 minutes on each side. Let it rest before slicing.
  5. Combine diced avocado, red onion, fresh cilantro, and olive oil in a bowl. Mix gently.
  6. Assemble by layering rice, sliced chicken, and avocado mixture on serving plates.
  7. Serve garnished with lime wedges.
