  3. Remove the mixture and roll into small balls or press into flat discs about 1/4 inch thick. Arrange on a lined baking sheet.
  4. Melt the dark chocolate in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  5. Dip each chilled peppermint disc into melted chocolate, coating fully, and place back on the lined baking sheet.
  6. Let sit at room temperature to harden for about 30 minutes or refrigerate for 10-15 minutes to speed up the process.
