  • 1 teaspoon Fresh Thyme, chopped Use dried if fresh isn't available
  • 1 pinch Red Pepper Flakes Optional
  • 4 cups Chicken Broth or Vegetable Broth Use vegetable broth for vegetarian
For the Creamy Texture
  • 3 cans White Beans, rinsed and drained Cooked dried beans can be used
  • 2 teaspoons Fresh Rosemary, chopped Dried rosemary may need less quantity
  • ¼ cup Parmesan Cheese, grated Nutritional yeast can be a vegan substitute
For the Finishing Touches
  • 2 tablespoons Lemon Juice Lime juice can be a substitute
  • 1 tablespoon Parsley, chopped Any fresh herb can work
  • Salt and Pepper To taste

Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large saucepan over medium-high heat. Add the diced onions, carrots, and celery. Sauté for 5-7 minutes until tender.
  2. Stir in the chopped garlic, thyme, and red pepper flakes. Cook for an additional minute, ensuring the garlic does not brown.
  3. Pour in the broth and add the white beans with fresh rosemary. Increase heat until boiling, then reduce to a simmer for about 10 minutes.
  4. Turn off heat, stir in the grated Parmesan cheese until melted and creamy.
  5. Stir in the lemon juice and chopped parsley. Season with salt and pepper to taste.
