Step-by-Step Instructions
  1. Cook Pasta: Bring a large pot of salted water to a boil, add pasta, and cook according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
  2. Heat Olive Oil: In a large skillet, heat olive oil over medium heat until shimmering.
  3. Sauté Sausages: Add sliced chicken sausages to the skillet and sauté for 5-7 minutes until browned. Remove and set aside.
  4. Add Zucchini: In the same skillet, add diced zucchini and sauté for 3-4 minutes until slightly softened.
  5. Incorporate Garlic & Tomatoes: Add minced garlic and halved cherry tomatoes, sauté for another 3-5 minutes.
  6. Season the Mixture: Sprinkle in dried oregano, basil, salt, and pepper. Stir well to combine.
  7. Combine with Pasta: Add the drained pasta and cooked sausages back to the skillet. Toss to combine.
  8. Warm Through: Heat on medium-low for 2-3 minutes, stirring occasionally.
  9. Garnish & Serve: Remove from heat, garnish with parsley and cheese if desired, and serve warm.
