Method
 

Step-by-Step Instructions
  1. Butterfly the chicken breasts and pound them to a uniform thickness of about ¼ inch.
  2. Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.
  3. Set up a breading station with three shallow bowls: one with whole wheat flour, one with whisked eggs, and one with the breadcrumb mixture.
  4. Dredge each chicken cutlet in flour, dip in the egg mixture, and coat with the breadcrumb mixture before placing on the baking sheet.
  5. Bake the chicken in the oven for 15 minutes, then flip and bake for another 15 minutes until golden brown.
  6. Spoon marinara sauce over each cutlet and sprinkle with shredded mozzarella.
  7. Broil for about 2 minutes until the cheese is melted and bubbly.
  8. Let it rest before serving hot over whole grain pasta or a fresh salad, garnished with fresh herbs.
