For the Tostadas
  • 8 tortillas Corn Tortillas flour tortillas can be used if preferred
  • 1 can Canned Refried Beans substitute with black beans
  • 2 cups Shredded Lettuce cabbage can be used
  • 1 cup Diced Tomatoes cherry tomatoes offer a sweeter taste
  • ½ cup Sliced Radishes cucumbers can be used
  • 1 cup Grated Cheese (Cheddar, Monterey Jack, or a Mix) opt for low-fat if desired
  • ½ cup Sour Cream Greek yogurt is a healthier substitute
  • ¼ cup Chopped Fresh Cilantro can be replaced with parsley
  • 2 Lime Wedges for serving

Step-by-Step Instructions
  1. Prepare the Marinade: In a medium bowl, whisk together olive oil, lime juice, chili powder, cumin, garlic powder, onion powder, and salt and pepper.
  2. Marinate the Chicken: Place the chicken in a resealable bag or shallow dish, pour the marinade over, seal, and refrigerate for at least 30 minutes to 2 hours.
  3. Preheat the Grill: Preheat the grill to medium-high heat, around 400°F.
  4. Grill the Chicken: Remove chicken from the refrigerator and grill each side for 6-7 minutes until the internal temperature reaches 165°F.
  5. Let the Chicken Rest: Allow the chicken to rest for 5 minutes on a cutting board.
  6. Prepare the Tortillas: Place corn tortillas on the preheated grill for 1-2 minutes on each side until crispy.
  7. Assemble the Tostadas: Spread a layer of refried beans over each tortilla.
  8. Add the Chicken and Toppings: Slice grilled chicken and layer it on top of the refried beans, followed by lettuce, tomatoes, radishes, and cheese.
  9. Finish with Garnishes: Top each tostada with sour cream and cilantro.
  10. Serve with Lime Wedges: Serve tostadas with lime wedges on the side.
