Ingredients

  • 1.5 pounds Chicken Breast or chicken thighs for more flavor
  • ¼ cup Olive Oil extra virgin preferred
  • 1 cup Lemon Juice fresh is best
  • 3 cloves Garlic minced
  • 2 teaspoons Oregano dried can substitute for fresh
  • 1 teaspoon Paprika can substitute with smoked paprika
  • to taste Salt & Pepper essential seasonings
  • to taste Red Pepper Flakes adjust for heat preference
For the Salsa
  • 1 medium Cucumber diced
  • 1 cup Tomatoes roma or vine-ripened
  • 1 medium Bell Pepper any color
  • ½ medium Red Onion or green onions for milder flavor
  • ¼ cup Parsley chopped
  • ¾ cup Feta Cheese crumbled
For Assembling
  • 4 pieces Pitas or tortillas
  • 1 cup Tzatziki can use yogurt to replace sour cream

Method
 

Preparation Steps
  1. In a mixing bowl, whisk together olive oil, lemon juice, minced garlic, oregano, paprika, and a pinch of salt and pepper until blended.
  2. Cut chicken breast into bite-sized chunks and coat thoroughly with marinade. Cover and marinate in the fridge for at least 15 minutes.
  3. Prepare the salsa by dicing cucumber, tomatoes, bell pepper, and red onion. Combine with parsley, feta, lemon juice, salt, and pepper. Let sit.
  4. Heat a skillet over medium-high heat, cook marinated chicken for 3-5 minutes per side until golden brown and cooked through.
  5. Warm pitas either over a gas flame or in a skillet until pliable.
  6. Assemble tacos by placing chicken in pitas, topping with salsa and tzatziki. Serve immediately.
