- Preheat your oven to 350°F (175°C). Gather all ingredients.
- Cream together 1/2 cup of softened butter, 1/2 cup of vegetable oil, and 1 cup of brown sugar until smooth. Beat in 1 egg and 1 tsp vanilla extract. Gradually add 2 1/2 cups flour, 2 tsp cinnamon, 1/2 tsp baking soda, 1/2 tsp baking powder, and 1/2 tsp salt until combined.
- Mix together 1/4 cup of softened butter, 1/4 cup of brown sugar, and a pinch of salt. Gradually add 1/3 to 1/2 cup of flour and 1/2 tsp cinnamon until it resembles coarse crumbs.
- Using a cookie scoop, portion out the dough onto a lined baking sheet. Press your thumb into the center of each dough ball.
- Spoon the streusel mixture generously into the indents of each cookie dough ball. Bake for 10-12 minutes until lightly golden.
- Whisk together 1/2 cup powdered sugar, 1 tbsp milk, and a splash of vanilla extract until smooth. This icing will drizzle over cookies.
