Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

  3. Add 2 large eggs, one at a time, mixing well after each addition, then add 1 teaspoon of vanilla extract and mix until smooth.
  4. In a separate bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon baking powder, ½ teaspoon baking soda, ½ teaspoon salt, and 2 teaspoons ground cinnamon.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.
  6. If desired, fold in chopped nuts or mini chocolate chips into the cookie dough.
  7. To make the streusel topping, combine ⅓ cup all-purpose flour, ¼ cup brown sugar, and 1 teaspoon ground cinnamon, then drizzle in 3 tablespoons melted unsalted butter and mix until crumbly.
  8. Drop rounded balls of cookie dough onto the prepared baking sheets, spaced about 2 inches apart.
