- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Cream together 1 cup of softened unsalted butter with ½ cup of granulated sugar and ½ cup of brown sugar using an electric mixer until light and fluffy.
- Add 2 large eggs, one at a time, mixing well after each addition, then add 1 teaspoon of vanilla extract and mix until smooth.
- In a separate bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon baking powder, ½ teaspoon baking soda, ½ teaspoon salt, and 2 teaspoons ground cinnamon.
- Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.
- If desired, fold in chopped nuts or mini chocolate chips into the cookie dough.
- To make the streusel topping, combine ⅓ cup all-purpose flour, ¼ cup brown sugar, and 1 teaspoon ground cinnamon, then drizzle in 3 tablespoons melted unsalted butter and mix until crumbly.
- Drop rounded balls of cookie dough onto the prepared baking sheets, spaced about 2 inches apart.
- Sprinkle streusel topping over each cookie dough ball and press gently to adhere.
- Bake for 10–12 minutes, until edges are golden brown and centers are soft.
- Let cool on the baking sheets for 5 minutes before transferring to wire racks.
