Ingredients
  

For the Salad
  • 4 cups coleslaw mix or shredded cabbage
  • 1 can black beans drained
  • 1 can canned corn kernels drained
  • 1 medium jalapeño pepper finely chopped
  • 1 medium red bell pepper chopped
  • 3 medium green onions sliced
  • 1 handful fresh cilantro chopped
For the Dressing
  • ¾ cup sour cream or Greek yogurt
  • ½ cup mayonnaise or vegan mayo
  • 2 tablespoons fresh lime juice or bottled juice
  • 1 tablespoon chipotle sauce or your favorite hot sauce
  • 1 packet taco seasoning or homemade with chili powder and cumin
  • 1 teaspoon ground cumin optional
For the Topping
  • 1-2 cups Chili Cheese Fritos crushed, reserve some for topping

Method
 

Preparation
  1. In a large mixing bowl, combine 4 cups of coleslaw mix, 1 can of drained black beans, 1 can of drained corn, 1 finely chopped jalapeño, 1 chopped red bell pepper, 3 sliced green onions, and a handful of chopped fresh cilantro. Stir well.
  2. In a separate medium bowl, whisk together ¾ cup of sour cream, ½ cup of mayonnaise, 2 tablespoons of lime juice, and 1 tablespoon of chipotle sauce until smooth and creamy. Set aside.
  3. Drizzle the creamy dressing over the vegetable mixture in your large bowl. Gently toss until evenly coated, then fold in 1-2 cups of crushed Chili Cheese Fritos.
  4. Transfer the Frito Cowboy Cabbage to a serving bowl and sprinkle reserved Fritos on top before serving.
