- In a large mixing bowl, combine 4 cups of coleslaw mix, 1 can of drained black beans, 1 can of drained corn, 1 finely chopped jalapeño, 1 chopped red bell pepper, 3 sliced green onions, and a handful of chopped fresh cilantro. Stir well.
- In a separate medium bowl, whisk together ¾ cup of sour cream, ½ cup of mayonnaise, 2 tablespoons of lime juice, and 1 tablespoon of chipotle sauce until smooth and creamy. Set aside.
- Drizzle the creamy dressing over the vegetable mixture in your large bowl. Gently toss until evenly coated, then fold in 1-2 cups of crushed Chili Cheese Fritos.
- Transfer the Frito Cowboy Cabbage to a serving bowl and sprinkle reserved Fritos on top before serving.
