  • 8 oz Bow-tie pasta or any short-cut pasta, gluten-free option available
  • 1 cup Cherry or grape tomatoes sliced in half
  • 1 cup Cucumbers quartered
  • 1 medium Red bell pepper diced
  • ½ medium Red onion chopped
  • ½ cup Pitted black and green olives sliced
  • 1 cup Feta cheese crumbled
For the Dressing
  • ½ cup Extra virgin olive oil high quality
  • ¼ cup Freshly squeezed lemon juice can swap with lime juice
  • 2 tbsp Red wine vinegar or apple cider vinegar
  • 2 tsp Dijon mustard yellow mustard can be used
  • 2 cloves Garlic minced
  • 1 tsp Dried oregano or Italian seasoning
  • to taste Salt
  • to taste Freshly ground black pepper or white pepper

Method
 

Step-by-Step Instructions
  1. Bring a large pot of salted water to a rolling boil. Add the bow-tie pasta and cook according to package instructions, about 8-10 minutes, until al dente. Drain and rinse under cold water.
  2. In a mixing bowl, combine olive oil, lemon juice, red wine vinegar, and Dijon mustard. Add minced garlic, oregano, salt, and black pepper. Whisk until emulsified.
  3. To the bowl with the dressing, add cherry tomatoes, cucumbers, red bell pepper, red onion, and olives. Stir gently to coat all vegetables with dressing and let marinate for 10 minutes.
  4. Once the pasta has cooled, add it to the bowl with crumbled feta cheese. Toss until well combined and taste to adjust seasoning.
  5. Chill in the refrigerator for about 30 minutes before serving to allow flavors to develop. Serve chilled or at room temperature.
