Salad
  • 6 cups Fresh Baby Spinach Ensure washed and dried well.
  • 1/2 cup Feta Cheese Can substitute with goat cheese or omit for vegan.
  • 1/2 cup Candied Pecans or Nuts Use regular pecans for less sweetness.

Method
 

Dressing Preparation
  1. In a medium bowl, whisk together the olive oil, honey, poppy seeds, Dijon mustard, lemon zest, juice, and kosher salt until well combined. Let sit for about 5 minutes.
Salad Assembly
  1. In a large serving bowl, place the spinach and add a pinch of salt.
  2. Slice the strawberries and add to the bowl.
  3. Crumble the feta cheese over the top.
  4. Sprinkle the candied pecans on top.
  5. Gently toss the salad and serve with dressing on the side.
