  • 2 tablespoons Lemon Juice added off heat
For the Finish
  • 1/2 cup Feta Cheese crumbled
  • 2 tablespoons Fresh Parsley chopped, for garnish

  1. Prep Ingredients: Cut chicken into uniform pieces, chop zucchini, red bell pepper, red onion, and mince garlic.
  2. Sear Chicken: Heat olive oil, add chicken, cook for 7-8 mins until golden brown.
  3. Sauté Vegetables: Remove chicken, add more oil, sauté onions and garlic for 1 min, then add zucchini and bell pepper for 3-4 mins.
  4. Combine: Return chicken, stir in sun-dried tomatoes and Kalamata olives, season, and cook for another 2-3 mins.
