Ingredients
  

For the Salad
  • 1 head Romaine Lettuce Chopped into 1-inch ribbons
  • 2 cups Roma Tomatoes Diced, seeds removed
  • 6 slices Turkey Bacon Cooked and crumbled
  • 2 cups Cooked Chicken Chopped, rotisserie or grilled
  • 8 ounces Chickpea Pasta Cooked according to package instructions
  • 1 small Red Onion Finely chopped
For the Dressing
  • 1 cup Ranch Dressing Or use a low-fat version
For Seasoning
  • 1 teaspoon Garlic Powder
  • to taste Salt
  • to taste Black Pepper

Method
 

Instructions
  1. Wash and chop the Romaine lettuce into 1-inch ribbons. Dice the Roma tomatoes and finely chop the red onion.
  2. Cook the turkey bacon in a skillet over medium-high heat for 5 to 7 minutes until crispy. Transfer to a plate, crumble and set aside.
  3. If using uncooked chicken, boil, grill, or poach until cooked through. Let cool, then chop into bite-sized pieces.
  4. Bring a large pot of salted water to a boil. Cook the chickpea pasta until al dente, drain, and rinse under cold water.
  5. In a mixing bowl, combine the chickpea pasta, turkey bacon, chicken, tomatoes, and red onion. Gently fold together.
  6. Season with garlic powder, salt, and black pepper. Drizzle with ranch dressing and toss gently to combine.
