Method
 

Step-by-Step Instructions
  1. Preheat the oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  2. Spread 1 cup of uncooked long-grain white rice evenly in the baking dish and pour in 1 ½ cups of low-sodium chicken broth.
  3. Arrange 1 ½ lbs of boneless, skinless chicken breasts on top of the rice and sprinkle with garlic powder, onion powder, oregano, and paprika.
  4. Spoon 1 cup of tzatziki sauce over the chicken, spreading it evenly.
  5. Cover the baking dish with aluminum foil and bake for 35 to 40 minutes.
  6. If there's excess liquid, uncover and bake for an additional 5-10 minutes to crisp the top.
  7. Let the casserole rest for 5 minutes, then garnish with feta cheese, fresh herbs, and optional cucumber slices before serving.
