Step-by-Step Instructions
  1. In a large mixing bowl, combine 1 stick of melted unsalted butter, 1 cup of brown sugar, 1/2 cup of molasses, and a pinch of salt along with your ground spices. Stir until smooth. Add 1 whole egg, mixing until fully incorporated.
  2. Add 1 teaspoon of baking soda and gradually mix in 3 cups of all-purpose flour until a smooth dough forms. Adjust flour if needed to achieve a pliable dough.
  3. Divide dough into two portions, wrap in plastic wrap, and refrigerate for about 30 minutes.
  4. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  5. Roll out one portion of the dough to about 1/4-inch thickness and cut out shapes using a gingerbread men cookie cutter. Place shapes on baking sheets.
  6. Bake cookies in the preheated oven for 7 to 8 minutes, until edges are golden brown and centers are slightly soft. Allow cooling before transferring to a wire rack.
  7. For icing, whisk together 2 cups of powdered sugar with 1 to 2 tablespoons of milk until smooth. Decorate cookies as desired.
