Method
 

Steps
  1. Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the rolled oats, mixed nuts, pumpkin seeds, chia seeds, flaxseeds, dried cranberries, cinnamon, and salt.
  3. Melt the natural peanut butter and honey together in a small saucepan over low heat, then stir in the vanilla extract.
  4. Pour the warm wet mixture over the dry ingredients, mixing until fully coated.
  5. Form portions of the cookie mixture into small balls and flatten them slightly on the baking sheet.
  6. Bake for 12-15 minutes until golden brown and firm to the touch.
  7. Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.
