Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan with parchment paper.
  2. Mix brown sugar and granulated sugar with oil in a bowl, then add eggs and whisk until smooth.
  3. In another bowl, sift all-purpose flour, baking powder, baking soda, spices, and salt.
  4. Gradually add half of the dry ingredients to the wet mixture, folding gently, then mix in sour cream and vanilla extract before adding remaining dry mix.
  5. Fold in grated carrots evenly into the batter.
  6. Pour batter into loaf pan, smoothing the top. Bake for 65 to 75 minutes until a toothpick comes out clean.
  7. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  8. Prepare frosting by creaming together room-temperature butter and cream cheese, then add powdered sugar gradually until smooth.
  9. Once the loaf is cooled, frost the top generously and decorate as desired.
