Preparation
  1. Step 1: Preheat the Oven - Preheat your oven to 350°F (175°C) and prepare the baking pan.
  2. Step 2: Combine Wet Ingredients - In a large bowl, mix grated carrots, eggs, maple syrup, melted coconut oil, Greek yogurt, and vanilla until smooth.
  3. Step 3: Mix Dry Ingredients - In another bowl, sift together oat flour, baking powder, baking soda, spices and salt.
  4. Step 4: Combine Wet and Dry Mixtures - Fold the dry ingredients into the wet mixture until just combined.
  5. Step 5: Pour and Bake - Pour the batter into the pan and bake for 20-25 minutes. Check for doneness with a toothpick.
