Method
 

Step-by-Step Instructions
  1. Bring a large pot of salted water to a rolling boil. Add pasta and cook for 8–10 minutes until al dente. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Add sliced mushrooms and sauté for 5–7 minutes until golden brown.
  3. Add minced garlic to the skillet and cook for 1 minute until fragrant, being careful not to burn.
  4. Stir in fresh spinach and cook for 2–3 minutes until wilted.
  5. Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese until melted and sauce thickens.
  6. Add the drained pasta to the sauce and toss gently for 1–2 minutes to coat.
  7. Season with salt and pepper to taste. Serve warm, garnished with basil or extra Parmesan.
