For the Eggs
  • 1 cup Grated Parmesan Cheese or substitute with feta
  • 4 large Eggs fresh

Step‑by‑Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Melt unsalted butter in a skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add spinach and cook until wilted, about 2-3 minutes for fresh, or until heated through for frozen. Season with salt and pepper.
  4. Reduce heat to low and stir in heavy cream, lemon juice, lemon zest, and nutmeg. Cook for 3-5 minutes until sauce thickens slightly.
  5. Stir in grated Parmesan cheese and adjust seasoning with salt and pepper.
  6. Create wells in the spinach mixture and crack an egg into each. Season the eggs.
  7. Sprinkle more Parmesan cheese over the dish and transfer to the oven. Bake for 12-15 minutes until whites are set and yolks are slightly runny.
  8. Let rest for 5 minutes before serving warm directly from the skillet.
