Preparation Steps
- Boil a large pot of salted water and cook LoMein noodles according to package instructions, about 4–5 minutes. Drain and rinse under cold water.
- Heat peanut oil in a large skillet over medium-high heat. Add ground pork and ¼ cup sliced green onions, cooking for about 5–6 minutes until fully cooked and browned.
- In a mixing bowl, whisk together chicken broth, mirin, dark soy sauce, minced garlic, grated ginger, and sesame oil. Add sriracha if desired.
- Add the cooked noodles and coleslaw mix to the skillet with pork. Pour the prepared sauce over everything and stir gently to combine.
- Cook for an additional 2–3 minutes, allowing flavors to meld and sauce to coat noodles and veggies. Serve in bowls garnished with remaining green onions.
