Ingredients
  

For the Patties
  • 1 lb Ground Chicken
  • 1 cup Crumbled Feta Cheese can substitute with goat cheese or ricotta
  • 1/4 cup Fresh Parsley chopped
  • 1 cup Diced Tomatoes drained
  • 1/2 cup Kalamata Olives chopped
  • 1/2 cup Red Onion finely diced
  • 2 cloves Garlic minced
  • 1/2 cup Breadcrumbs adjust based on moisture
  • 2 tbsp Olive Oil for frying
  • 1 large Egg beaten

Method
 

Cooking Instructions
  1. In a large mixing bowl, combine the ground chicken, crumbled feta cheese, freshly chopped parsley, minced garlic, and a large egg. Mix gently until just combined.
  2. Fold in the diced tomatoes, chopped Kalamata olives, finely diced red onion, and breadcrumbs. Season with salt and pepper and mix gently.
  3. Form the mixture into four equal-sized patties, about ¾ inch thick. Refrigerate for at least 15 minutes.
  4. Heat a non-stick skillet over medium-high heat and add olive oil. Allow it to heat for about 2 minutes.
  5. Place the patties in the skillet and cook for 5-6 minutes on each side until golden brown and cooked through.
  6. Remove from skillet and let rest on a paper towel-lined plate for 2 minutes before serving.
