  • 100 grams Crustless Bread Use gluten-free bread for a gluten-free version.
  • 125 ml White Wine Substitute with milk or vegetable broth.
  • 100 grams Minced Onion Can use shallots or green onions.
  • 4 cloves Minced Garlic Use garlic powder if fresh isn’t available.
  • 0.5 teaspoon Ground Cumin Omit if not preferred.
  • 1 teaspoon Dried Oregano Fresh oregano can be used.
  • 2 teaspoons Dried Parsley Fresh parsley delivers a brighter flavor.
  • 1 teaspoon Fine Sea Salt Adjust to taste.
  • 0.5 teaspoon Ground Pepper Freshly cracked is preferable.
For the Creamy Lemon Sauce
  • 4 tablespoons Butter Vegan alternatives include olive oil.
  • 4 tablespoons All-Purpose Flour Use gluten-free flour for a gluten-free version.
  • 2 cups Hot Water or Stock Any broth works.
  • 8-10 tablespoons Lemon Juice Adjust based on preference.

Method
 

Cooking Steps
  1. Soak the crustless bread in white wine for about 5 minutes.
  2. Mix the soaked bread with ground pork, ground beef, egg, onion, garlic, cumin, oregano, parsley, salt, and pepper until combined.
  3. Shape the mixture into meatballs weighing around 65-70 grams and refrigerate for 1 hour.
  4. Sear the meatballs in a skillet for about 4 minutes on each side until browned.
  5. Melt butter in another pan, add flour, and whisk in hot water or stock and lemon juice to create a sauce.
  6. Add meatballs to the sauce and simmer for 20 minutes, turning occasionally.
  7. Serve over rice or alongside roasted potatoes, garnished with pepper and oregano.
