Preparation Steps
  1. Marinate the Chicken: In a large bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, paprika, salt, and pepper until well blended. Cut the chicken breasts into bite-sized cubes, then toss them in the marinade. Let the chicken marinate for at least 30 minutes, or up to two hours for maximum flavor.
  2. Prepare the Skewers: Soak wooden skewers in water for about 20 minutes. Once soaked, thread the marinated chicken pieces onto the skewers.
  3. Grill the Chicken: Preheat your grill to medium-high heat. Place the chicken skewers on the grill and cook for 8-10 minutes, turning halfway through.
  4. Make the Feta Dip: In a blender, combine feta cheese, plain Greek yogurt, olive oil, lemon zest, lemon juice, minced garlic, and fresh dill. Blend until smooth and creamy.
  5. Assemble the Grazing Board: Arrange the grilled chicken skewers on a board. Add bowls of feta dip, kalamata olives, roasted red peppers, cherry tomatoes, and sliced cucumbers around the chicken.
