Ingredients

  • 2 cloves Garlic adjust based on tolerance
  • 1 tablespoon Dill dried dill can work in a pinch
  • 2 tablespoons Lemon Juice can substitute with vinegar
For the Base
  • 1 cup Rice or Quinoa can use cauliflower rice for low-carb option
For the Vegetables
  • 2 cups Fresh Vegetables like bell peppers, cherry tomatoes, lettuce, customizable
For Optional Add-ins
  • 1/2 cup Olives omit for dairy-free and vegan
  • 1/2 cup Feta Cheese substitute with vegan cheese for dairy-free

Method
 

Marinating and Cooking
  1. Marinate the chicken breasts with olive oil, lemon juice, minced garlic, and herbs for 30 minutes to 2 hours.
  2. Prepare the tzatziki sauce by mixing Greek yogurt, grated cucumber, minced garlic, dill, and lemon juice. Chill in the fridge.
  3. Cook rice or quinoa according to package instructions, fluffing with a fork after cooking.
  4. Cook marinated chicken in an air fryer at 380°F for 7 minutes, flip and cook for an additional 3-4 minutes until fully cooked.
  5. Assemble the bowls with cooked rice or quinoa, chopped veggies, grilled chicken, and tzatziki sauce.
  6. Serve immediately or store in airtight containers for meal prep.
