Ingredients
  

For the Chicken

  • 1 tablespoon Cornstarch Essential for marinating.
  • 1 teaspoon Salt To taste.
For the Sauce
  • 1 cup Chicken Broth Base for the sauce.
  • 2 tablespoons Oyster Sauce Swap for vegetarian option if preferred.
  • 2 tablespoons Soy Sauce Use regular or light.
  • 1 teaspoon Sugar Balances savory with sweetness.
  • 1 dash White/Black Pepper Adjust to heat preference.
  • 1 teaspoon Sesame Oil Optional but recommended.
For the Stir-Fry
  • 2 tablespoons Peanut Oil (or Vegetable Oil) High smoke point cooking oil.
  • 3 cups Shredded Cabbage Pre-packaged coleslaw optional.
  • 2 cloves Garlic Minced.
  • 1 tablespoon Ginger Minced.
  • 8 ounces Fresh or Dried Chow Mein Noodles Fresh preferred.
  • 1 cup Carrots & Anaheim Pepper (Optional) For added color and sweetness.
  • 2 tablespoons Green Onions Sliced for garnish.

Method
 

Step-by-Step Instructions
  1. In a mixing bowl, combine thinly sliced chicken with Shaoxing wine, cornstarch, and salt. Marinate for about 15 minutes.
  2. In a separate bowl, whisk together chicken broth, Shaoxing wine, oyster sauce, soy sauce, sugar, pepper, and sesame oil. Set aside.
  3. Boil water in a large pot and cook noodles until al dente, according to package instructions. Drain and rinse with cold water.
  4. Heat peanut oil in a skillet over medium-high heat. Sauté marinated chicken until golden and cooked through, about 1 minute per side. Remove from skillet.
  5. In the same skillet, add minced garlic and ginger. Stir-fry for about 30 seconds until fragrant.
  6. Add shredded cabbage and additional vegetables and stir-fry for 1-2 minutes until softened.
  7. Return cooked chicken and drained chow mein noodles to the skillet. Pour in the prepared sauce and toss to coat evenly. Cook for 1-2 minutes.
  8. Fold in sliced green onions and serve hot.
