Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a 12-cup muffin pan with liners and nonstick spray.
  2. In a large bowl, whisk together brown sugar, eggs, milk, oil, vanilla, and vinegar until smooth.
  3. Sift in flour, cocoa powder, baking powder, baking soda, and salt. Mix gently until no dry spots remain.
  4. Fold dry ingredients into wet mixture, then gently fold in chocolate chips.
  5. Fill each muffin cup to the top with batter and sprinkle coarse sugar on top if desired.
  6. Bake in the preheated oven for 20-25 minutes until tops are set and a toothpick comes out mostly clean.
  7. Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  8. In a saucepan, combine sugar, cream, cocoa, butter, and salt. Stir over low heat until smooth and glossy.
  9. Create a tunnel in the center of each warm muffin with a knife and fill with the warm molten filling.
