Method
 

Making the Truffles
  1. Crush the Mint Oreo Cookies into fine crumbs using a food processor or a rolling pin.
  2. In a large mixing bowl, combine the crushed Mint Oreos with cream cheese until smooth.
  3. Shape the mixture into 1-inch balls and place on a parchment-lined baking sheet.
  4. Refrigerate the truffles for 30 minutes or freeze for 15 minutes to firm up.
  5. Melt chocolate in a microwave-safe bowl in 30-second intervals, stirring between each until smooth.
  6. Dip each truffle into the melted chocolate, allowing excess to drip off and return to the baking sheet.
  7. Before the chocolate sets, add your desired toppings for decoration.
  8. Chill the decorated truffles for another 15-20 minutes to harden completely.
