  • 1 cup Cherry Tomatoes halved
  • 1/2 medium Red Onion finely chopped
  • 4 slices Cooked Bacon crumbled, or use crispy chickpeas for vegetarian option
  • 1 cup Shredded Cheese cheddar, mozzarella or feta
  • 2 tablespoons Fresh Dill chopped
  • 1 cup Ranch Dressing or Greek yogurt dressing for a lighter version
  • 1 teaspoon Salt to taste
  • 1 teaspoon Pepper to taste

Method
 

Preparation
  1. Wash and dry cucumbers, then dice into medium-sized pieces.
  2. Halve the cherry tomatoes.
  3. Finely chop the red onion and set aside.
  4. Cook raw bacon in a skillet over medium heat until crispy, about 8-10 minutes.
  5. Combine diced cucumbers, halved cherry tomatoes, and chopped red onion in a large bowl. Toss gently.
  6. Fold in crumbled bacon and shredded cheese.
  7. Pour ranch dressing over the vegetable mixture, add fresh dill, and stir gently.
  8. Season with salt and pepper to taste.
  9. Cover and refrigerate for at least 30 minutes before serving.
  10. Toss gently before serving to redistribute ingredients.
