  • 2 large English Cucumbers chopped
  • 1 cup Freshly Squeezed Lime Juice from about 8-10 limes
  • 1/2 cup Granulated Sugar or to taste
For the Flavor
  • 10-15 leaves Fresh Mint Leaves set aside a few for garnish
  • 1-2 inches Fresh Ginger unpeeled
For Mixing
  • 4 cups Water divided into two portions

Method
 

Step-by-Step Instructions
  1. Gather your ingredients: large English cucumbers, freshly squeezed lime juice, granulated sugar, fresh mint leaves, fresh ginger, and water.
  2. In your blender, combine the chopped cucumbers, lime juice, sugar, most of the mint leaves, ginger, and 2 cups of water. Blend on high speed until smooth, about 30-45 seconds.
  3. Strain the blended mixture through a fine mesh sieve into a pitcher, pressing down on the pulp to extract as much liquid as possible.
  4. Add the remaining 2 cups of water to the strained mixture in the pitcher. Stir well and adjust sweetness or tartness as needed.
  5. Cover the pitcher and refrigerate the agua fresca for at least 30 minutes to chill.
  6. Serve over ice-filled glasses and garnish with reserved mint leaves.
