  • 1 tablespoon cumin Toasted and ground
  • 1 tablespoon oregano Crushed dried
  • 1/4 cup olive oil Standard olive oil
For the Chicken
  • 4 pieces chicken thighs Bone-in, skin-on
For Garnish
  • 1/4 cup cilantro Freshly chopped

Method
 

Preparation Steps
  1. In a mixing bowl, combine lime juice, orange juice, minced garlic, cumin, oregano, and olive oil. Whisk together until fully blended.
  2. Place chicken thighs into the marinade, ensuring each piece is well-coated. Cover and refrigerate for at least 8 hours, preferably overnight.
  3. Preheat your oven to 425°F (220°C). Ensure the oven is completely heated.
  4. Remove chicken from the marinade and pat dry with paper towels.
  5. Arrange chicken on a baking sheet, skin-side up. Roast for 35–40 minutes until skin is golden and a meat thermometer reads 175°F.
  6. Baste the chicken with leftover marinade halfway through roasting.
  7. If necessary, broil for 2-3 minutes for extra crispiness.
  8. Let the chicken rest for a few minutes, then garnish with cilantro before serving.
