Ingredients
  

For the Salmon
  • 2 fillets Salmon skin-on or skinless as preferred
For the Rice Base
  • 1 cup Sushi Rice or jasmine/brown rice as alternatives
For the Fresh Veggies
  • 1 cucumber Cucumber julienned or sliced
  • 1 avocado Avocado sliced
  • 1 cup Carrots spiralized or julienned
For the Flavor Enhancers
  • 2 sheets Nori for umami flavor
  • 1/4 cup Spicy Mayo mix of mayonnaise and Sriracha
  • 2 tablespoons Soy Sauce gluten-free if necessary
  • 1 tablespoon Sesame Seeds optional garnish
  • 2 tablespoons Green Onions sliced for topping

Method
 

Cooking Instructions
  1. Rinse sushi rice under cold water until the water runs clear and combine with water in a rice cooker. Cook until tender and water is absorbed.
  2. Heat a nonstick skillet, season salmon with salt and pepper, and cook skin-side down for 4-5 minutes until golden. Flip and cook for another 3-4 minutes.
  3. Wash and slice vegetables. Julienne cucumber and carrots, slice avocado, and set aside.
  4. Layer cooked rice at the bottom of bowls, top with vegetables, and lay the salmon on top.
  5. Garnish with nori strips, drizzle with spicy mayo, and sprinkle sesame seeds and green onions. Serve immediately.
