- Preheat your oven to 400°F (200°C) and prepare a baking sheet lined with parchment paper.
- In a mixing bowl, crumble the feta cheese and season it with dried oregano, black pepper, and optional chili flakes. Mix gently until well-combined.
- Take two sheets of phyllo pastry, brush each with melted butter, and layer them to enhance texture.
- At one end of the phyllo, spoon a portion of the feta mixture, leaving space at the edges.
- Fold the sides of the phyllo over the filling, then roll tightly from the filled end.
- Place the rolls seam-side down on the baking sheet, brush with more melted butter, and sprinkle with panko breadcrumbs.
- Bake for 20-25 minutes until golden brown and crispy, keeping an eye on them during the last few minutes.
- Combine honey and chili oil in a small pan over low heat until warmed through.
