  • 150 ml Ice Cold Water Ensure water is ice-cold.
  • 1 tsp Salt
Dipping Sauce Ingredients
  • 100 g Japanese Mayonnaise
  • 1 tbsp Soy Sauce
  • 1 tbsp Toasted Sesame Oil
Frying Ingredients
  • 500 ml Grapeseed Oil Ideal for frying.
  • 1 tbsp Furikake Seasoning For serving.

Method
 

Step-by-Step Instructions
  1. Prepare the Dipping Sauce: Whisk together Japanese mayonnaise, toasted sesame oil, and soy sauce in a small bowl, cover, and refrigerate.
  2. Prep the Mushrooms: Trim the base of the enoki mushrooms and separate into clusters without washing them. Use a damp cloth if necessary.
  3. Make the Batter: Combine tapioca flour, plain flour, salt, and ice-cold water in a mixing bowl, whisking until smooth and lump-free.
  4. Heat Oil: Heat grapeseed oil in a pot to 190°C (375°F) for frying.
  5. Fry Mushrooms: Dip enoki mushrooms in the batter and fry in small batches for 2-3 minutes until golden brown.
  6. Serve: Drain excess oil on paper towels and serve hot with the sesame mayo and sprinkle with furikake seasoning.
