Step-by-Step Instructions

  2. Grate the zucchini into fine pieces and press down in a colander to remove excess moisture.
  3. In a large mixing bowl, combine the zucchini, panko breadcrumbs, cheddar cheese, eggs, cornstarch, and seasonings; mix thoroughly.
  4. Scoop portions of the mixture and roll into small tot shapes, placing them on the prepared baking sheet with space in between.
  5. Bake in the preheated oven for 18 to 22 minutes until golden brown and crispy.
