Step‑by‑Step Instructions
  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Wash and dry a head of fresh cauliflower. Cut into uniform florets sized 1.5 to 2 inches.
  3. In a mixing bowl, combine flour, garlic powder, onion powder, paprika, salt, and pepper. Gradually add milk to create a smooth batter.
  4. Dip each cauliflower floret into the batter, then sprinkle panko breadcrumbs over each floret.
  5. Arrange the coated florets on the baking sheet and bake for 20-25 minutes, flipping halfway through.
  6. In a saucepan, melt butter and whisk in buffalo sauce and optional honey or maple syrup until smooth.
  7. Transfer baked cauliflower to a bowl and toss with buffalo sauce until well-coated.
  8. Return sauce-coated cauliflower to the baking sheet and bake for another 10-12 minutes until golden brown.
  9. Let cool for about 5 minutes before serving. Garnish with herbs if desired.
