Method
 

Preparation Steps
  1. Preheat your oven to 400°F (205°C).
  2. In a large skillet, heat a splash of cooking oil over medium heat. Add diced onions and sauté for 5-7 minutes until soft and golden. Stir in minced garlic, chopped chipotle pepper, and favorite spices; cook for another minute.
  3. Add canned black beans and vegetable stock to the skillet, gently mashing the beans while blending. Simmer for about 5 minutes, and finish with a squeeze of fresh lime juice.
  4. Wrap corn tortillas in damp paper towels and microwave for 30 seconds to soften.
  5. Lightly coat a baking sheet with oil. Place a spoonful of the black bean mixture onto a tortilla, sprinkle with cheese, fold and place seam side down on the baking sheet.
  6. Bake for 20-30 minutes until golden brown and crispy, flipping halfway through.
  7. Let the tacos cool for a couple of minutes before serving warm with your favorite toppings.
