  • 150 g fresh pasta per person, adjust for dried pasta
For the Sauce
  • 1 whole head garlic roasted
  • 2 tablespoons olive oil for drizzling
  • 2 tablespoons butter cubed for easier melting
  • to taste pepper freshly cracked
  • 200 ml cream light or single cream preferred
  • 2 tablespoons freshly squeezed lemon juice
  • 1 teaspoon lemon zest
  • 50 g parmesan cheese finely grated
  • 1 teaspoon dried paprika flakes optional

Method
 

Preparation
  1. Preheat your oven to 200°C (390°F). Slice off the tops of whole heads of garlic, drizzle with olive oil, wrap in foil, and roast for 40–50 minutes until golden brown.
  2. Melt butter in a skillet over medium heat until light brown. Stir in freshly cracked pepper.
  3. Squeeze roasted garlic into the skillet, mix thoroughly with the butter.
  4. Pour in the cream, stirring continuously to create a smooth sauce.
  5. Add lemon juice and zest, stirring to incorporate.
  6. Gradually add parmesan, stirring until melted and blended.
  7. Combine cooked pasta with the sauce in the skillet, tossing well to coat.
  8. Adjust seasoning and thickness with reserved pasta water as needed before serving.
