For Cooking
  • 1 tablespoon Olive Oil Or cooking spray or butter

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Spread a layer of cottage cheese across the bottom of a medium baking dish.
  3. Spoon marinara sauce over the cottage cheese layer evenly.
  4. Sprinkle chopped bell peppers, sliced mushrooms, and chopped spinach on top.
  5. Sprinkle shredded mozzarella cheese over the veggie layer.
  6. Drizzle olive oil over the cheese and veggies, then season with salt and pepper.
  7. Bake for about 20-25 minutes until the cheese is melted and bubbly.
  8. Let it cool for a few minutes before serving. Garnish with fresh basil if desired.
