  • 1 lb boneless, skinless chicken breasts shredded rotisserie chicken can be used

  • 10.5 oz condensed cream of mushroom soup substitute with cream of celery if desired
  • 10.5 oz condensed cream of chicken soup try dairy-free alternatives for vegan option
  • 1 cup milk use dairy-free milk for lactose-free version
  • 1 cup Parmesan cheese, grated Pecorino Romano is a great substitute
  • 1 cup heavy cream half-and-half can be used for lighter option
For the Toppings
  • 2 cups mozzarella cheese, shredded fontina cheese can substitute
  • 32 oz cooked tater tots swap for homemade potato tots if desired
  • 1 cup cheddar cheese, shredded optional, any melting cheese can be used
  • 2 tbsp fresh parsley, chopped dried parsley can be used
  • to taste black pepper adjust to taste

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 375°F (190°C).
  2. Cut the chicken into bite-sized pieces. Heat olive oil in a skillet and sauté the chicken for 6-8 minutes until cooked through. Set aside.
  3. In the same skillet, add onion and sauté for 3-5 minutes. Add garlic and cook for another minute.
  4. Stir in cream of mushroom soup, cream of chicken soup, milk, Parmesan, parsley, black pepper, and salt. Simmer for 5-7 minutes.
  5. Mix in heavy cream and shredded mozzarella until melted and smooth.
  6. Layer half of the Alfredo sauce in a greased baking dish, add chicken, top with remaining sauce, and finish with tater tots.
  7. Sprinkle cheddar cheese on top for extra flavor if desired.
  8. Bake in the oven for 20-25 minutes until golden brown and bubbly.
  9. Let the casserole rest for 10 minutes before serving.
