Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with butter or cooking spray.
  2. Wash and peel the Yukon Gold potatoes if desired, slice them thinly (about 1/8 inch thick), and soak in cold water for 15 minutes.
  3. Layer half of the sliced potatoes in the prepared baking dish, overlapping slightly.
  4. In a medium saucepan, melt the butter, whisk in the flour, then gradually add the milk and cream, stirring until thickened.
  5. Remove from heat and stir in mozzarella and cheddar cheeses until fully melted.
  6. Pour half of the cheese sauce over the first layer of potatoes, cover with aluminum foil and bake for 30 minutes.
  7. Remove foil, pour remaining cheese sauce over potatoes, and bake uncovered for an additional 60 minutes.
  8. Allow to cool slightly, garnish with parsley or dill, and serve.
