Preparation
- Preheat your oven to 350°F (175°C) and grease a 12-cup muffin tin with olive oil or non-stick spray.
- In a mixing bowl, whisk the eggs until frothy, about 1-2 minutes.
- Incorporate the cottage cheese into the whisked eggs until fully smooth.
- Fold in the shredded cheddar cheese evenly.
- Mix in the chopped spinach, red bell pepper, garlic powder, salt, black pepper, and onion powder.
- Activate the baking powder with a splash of water and mix it into the egg mixture.
- Stir in the olive oil until evenly combined.
- Fill each muffin cup almost to the top with the egg mixture.
- Bake for 18-20 minutes until set and golden.
- Let cool for 5 minutes, then run a knife around the edges to release the bites.
- Serve warm or store in an airtight container after cooling.
