Ingredients
  

For the Base
  • 1 cup Cottage Cheese Can substitute with dairy-free options
  • 6 large Eggs
  • 1 tablespoon Olive Oil Can be substituted with melted butter
For the Flavor
  • 1 cup Shredded Cheddar Cheese Can substitute with mozzarella, Monterey Jack, or Swiss
  • 1 cup Chopped Spinach Can use kale or Swiss chard
  • 1 medium Chopped Red Bell Pepper Can substitute with other bell peppers
  • 1 teaspoon Garlic Powder Fresh garlic can be used as a substitute
  • 1 teaspoon Onion Powder Fresh onions can be used in place
  • 1 teaspoon Salt Adjust to taste
  • 1/2 teaspoon Black Pepper Adjust to preference
  • 1 teaspoon Baking Powder Do not skip for best results

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 12-cup muffin tin with olive oil or non-stick spray.
  2. In a mixing bowl, whisk the eggs until frothy, about 1-2 minutes.
  3. Incorporate the cottage cheese into the whisked eggs until fully smooth.
  4. Fold in the shredded cheddar cheese evenly.
  5. Mix in the chopped spinach, red bell pepper, garlic powder, salt, black pepper, and onion powder.
  6. Activate the baking powder with a splash of water and mix it into the egg mixture.
  7. Stir in the olive oil until evenly combined.
  8. Fill each muffin cup almost to the top with the egg mixture.
  9. Bake for 18-20 minutes until set and golden.
  10. Let cool for 5 minutes, then run a knife around the edges to release the bites.
  11. Serve warm or store in an airtight container after cooling.
