Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and prepare a greased baking dish.
  2. Toss zucchini, red bell peppers, and cherry tomatoes with olive oil, oregano, garlic powder, salt, and pepper, then roast for about 15 minutes.
  3. In a mixing bowl, combine cottage cheese, eggs, and half of the mozzarella until smooth.
  4. Layer the roasted vegetables in the baking dish, followed by the cottage cheese mixture.
  5. Top with remaining mozzarella and Parmesan cheese.
  6. Bake for 30 to 35 minutes until golden brown and bubbly.
  7. Let the dish rest for about 10 minutes and garnish with fresh basil or parsley before serving.
