Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and grease a 9x13-inch baking dish.
  2. Whisk together 2 cups of all-purpose flour, 1 teaspoon of baking powder, and a pinch of salt. Cut in 1 cup of cold butter until crumbly. Stir in 1 cup of sugar and 1 beaten egg. Press this mixture into the bottom of the baking dish.
  3. Combine 4 cups of sliced rhubarb, 1/2 cup of sugar, and the zest and juice of one lemon in a saucepan. Cook over medium heat for 3-4 minutes, stirring until rhubarb softens.
  4. Sprinkle in 2 tablespoons of cornstarch and simmer for an additional 5 minutes, stirring constantly until thickened. Cool for 5 minutes before spreading over the crust.
  5. Combine 1 cup of old-fashioned oats, 1/2 cup of sugar, 1/4 cup of vanilla sugar, and 1 teaspoon of ground cinnamon. Mix in 1/2 cup of melted butter until well combined.
  6. Pour the rhubarb filling over the crust and sprinkle the oat mixture on top. Bake for 20-25 minutes until the topping is golden brown.
  7. Allow to cool in the pan on a wire rack for at least 15-20 minutes before slicing.
