Making the Sandwiches
- In a small mixing bowl, combine cream cheese, sour cream (or mayo), dill, and kosher salt. Mix until smooth.
- Spread herbed cream cheese on one side of each slice of bread.
- Wash the cucumber and thinly slice it into rounds (about 1/8 inch thick).
- Layer cucumber slices on half of the cream cheese-covered bread.
- Top with the remaining bread slices, cream cheese side down. Press gently to close.
- Trim crusts off the sandwiches and cut into quarters in rectangles or triangles.
- Arrange sandwiches on a platter and garnish with dill or cucumber slices if desired. Serve immediately or refrigerate for 15 minutes.
