Ingredients
  

For the Herbed Cream Cheese Spread
  • 8 oz Cream Cheese Softened
  • 2 tbsp Sour Cream or Mayo Substitutes: Greek yogurt
  • 1 tbsp Dill Fresh or dried
  • 1 tsp Kosher Salt
For the Sandwiches
  • 1 large English Cucumber Thinly sliced
  • 8 slices Sandwich Bread Soft white or whole wheat

Method
 

Making the Sandwiches
  1. In a small mixing bowl, combine cream cheese, sour cream (or mayo), dill, and kosher salt. Mix until smooth.
  2. Spread herbed cream cheese on one side of each slice of bread.
  3. Wash the cucumber and thinly slice it into rounds (about 1/8 inch thick).
  4. Layer cucumber slices on half of the cream cheese-covered bread.
  5. Top with the remaining bread slices, cream cheese side down. Press gently to close.
  6. Trim crusts off the sandwiches and cut into quarters in rectangles or triangles.
  7. Arrange sandwiches on a platter and garnish with dill or cucumber slices if desired. Serve immediately or refrigerate for 15 minutes.
